The Moulin de Ponceau family adventure began in 2019 for Stéphane, Mickaël and Franck. Having fallen under the spell of the 17th-century property, they combined their experience and sensibilities to write the new score for this Chartres institution.
In addition to the gastronomic delights, enjoy exquisite moments of conviviality in an authentic and elegant atmosphere.
The large floor-to-ceiling windows on the ground floor open onto the River Eure and the city's iconic monuments, while the terrace provides a charming backdrop for al fresco dining. A unique location, and the only one of its kind in Chartres.
Celebrations for special occasions among friends and family, as well as business events, can be hosted in our private spaces to offer you complete intimacy.

Concerned about the environment and the wellbeing of all, we are committed to an environmentally-friendly approach. As such, we favour short supply chains and value regional produce. This approach is reflected in our 3 Écotable label and our title of Maître Restaurateur, testifying to our commitment to sustainable gastronomy that is good for the planet, our customers and our teams.

Combining talents and sensibilities
The establishment's three masterminds, Stéphane, Mickaël and Franck, combine their expertise and love for the world of gastronomy to offer you a truly unique experience.
In Chartres, Stéphane is building on a distinguished career as a restaurant manager in a number of upmarket establishments, notably in Paris and Strasbourg. At Le Moulin de Ponceau, he combines his love of the past with his love of gastronomy. His personal touch: his people skills and enthusiasm. Mickaël has worked in some of the top Michelin-starred establishments. He embodies our commitment to warm, attentive service, attending to every detail to make your experience a truly memorable one. Alongside them, Franck, a non-conformist pastry virtuoso, shapes Le Moulin de Ponceau's sugared confections with creativity and passion.
Chef Jean-François Sadones joined the restaurant team in 2024. This marked a return to his roots, having frequented the establishment with his parents as a young boy. He has now fulfilled his childhood dream by stepping behind the stoves of Le Moulin de Ponceau, with a wealth of experience to feed and nurture his inspiration. Self-taught and passionate, Chef Sadones creates daring, modern recipes that bring out the very best in local produce.
